Vegetable Spring Rolls

Ingredients:
  • Spring roll pastry sheets (deforest to room temperature to separate each sheet)
  • 1 cup mixed vegetables(shredded carrot & cabbage,beans,peas,corn & chopped capsicum, etc)
  • 1 medium size sliced Onion
  • 1 tbsp Ginger garlic paste
  • 1 tbsp Soya sauce
  • 1 tbsp red chilli paste
  • 1 Chopped green chilly
  • 1 tbsp all purpose flour
  • Salt & ground pepper to taste
  • cooking Oil for deep fry
  • water
Preparation process:
  • In a pan boil water and then add mixed vegetables cook till the are soft.
  • Drain water from the vegetables and keep it aside.
  • Heat 2 tbsp oil in a pan on medium flame and fry onions. 
  • Add ginger garlic paste and fry for another minute.
  • Next add boiled and drained vegetables and green chillies and fry them.
  • add soya sauce, red chili paste,salt,ground pepper then mix evenly for a minute. then turn off the flmae.
  • let it cool before stuffing.
  • In a bowl take allpurpose flour and add water and make it a like paste.
  • Take each pastry sheet and place it like a diamond corners facing to you.
  • Add stuffing ad roll tightly till the middle then brush up the paste to the edges then fold the sides to middle.
  • Again roll till edge and keep aside.
  • Do prepare all of them.mean while heat oil in a frying pan.
  • Drop each of them into the oil and fry till tey are golden brown.
        Serve HOT HOT!!! with ketchup.

All Purpose Flour Bajji ( Maida Pindi Bajji)

Ingredients:
  • 1 1/2 Cups maida (All purpose Flour)
  • 3 tbsp Sooji
  • 1/2tbsp rice flour
  • 2 Green chilies (finely chopped very small)
  • 1/4 Cup onion ( finely chopped very small)
  • Sour curd ( to make the batter)
  • ¼ tbsp baking powder
  • 1 tbsp Cumin Seeds
  • 1/4 Cup Chopped coriander leaves (optional)
  • 1/4 Cup spring onion (chopped)
  • Few Chopped curry leaves
  • Salt to taste
  • Oil to deep fry

Preparation Process:
  • In a mixing bowl take maida,rice flour,sooji.
  • Add salt,Baking Powder,cumin seeds,chopped green chillies, chopped onions, coriander & curry leaves.
  • Adding sour curd to make batter not too thick nor too thin.
  • Take  oil in a frying pan on medium high flame.
  • Once oil is heat then drop the batter like very small  balls in the oil and deep fry them till they are in golden brown.
         Serve HOT HOT!!! with onions, As a evening snack.

Bhel Chaat (Puff Rice Chaat)

Ingredients:

  • 2 Cups puff rice (Bhel)
  • 1/2 Cup boiled potatoes
  • 1/2 Cup tomatoes chopped
  • 1/4 Cup chopped onion (very small)
  • 1   chilli chopped
  • Pinch of tumeric powder
  • 1/4 Cup green chutney
  • 1/4 Cup tamarind chutney
  • 1 Cup Thin Sev
  • 1/4 Cup Coriander leave.
  • salt to taste

Preparation Process: 
  • Take puff rice in a mixing bowl, Mash the boiled Potatoes & add.
  • Add tomatoes,onion,green chilli,tumeric powder,green chutney and tamarind chutney together.
  • Add salt then Mix Evenly.
  • Finally add Sev Coriander.
        Serve Immediately. 


Note: For this you can add any of your desired ingredients,but to get the same taste Green & tamarind    Chutney's are Must.
Substitue for Green And Tamarind Chutney is Tomato Chilli Sauce.

Puff Pastry (Vegetable Puff)

Ingredients:
  • Ready to use pastry rolls (Pepperidge farms)
  • 1 Cup Very small chopped potatoes
  • 1/4 cup peas
  • 1/4 cup carrot chopped
  • 1/4 Cup chopped Beans
  • 1/2 Cup Paneer( cut like cubes)
  • 1 tbsp Lemon juice
  • 1/2 tbsp Garam Masala
  • 1 green chilli chopped
  • 1/4 cup spring onion
  • 1/4 cup chopped onions
  • 1/2 tbsp cumin seeds
  • 1/2 tbsp ginger&garlic paste
  • pinch of turmeric powder
  • 1/4 cup coriander leaves
  • 1 tbsp red chillies
  • 2 tbsp cooking oil
  • salt to taste
  • water
  • 2 tbsp milk or ghee

Preparation Process:
  • Boil water in a pan on medium flame.
  • once water is boilig add carrot,beans,potatoes and boil the vegetables till they are soft.
  • Drain the water and keep it aside.
  • Add oil to a frying pan on medium flame.
  • Add cumin seeds once it starts splatters add green chilly,onions,spring onions,turmeric powderand ginger& garlic paste.
  • Add boiled vegetables,green peas,paneer add garam masala,redchilli powderand salt.
  • Mix well and cook for 5-8 min.
  • Finally turn off the flame add the chopped coriander & lemon juice and mix well.
  • cool down the stuff before use
  • Take the puff pastry rolls out from refregirator befor an hour.
  • Take each roll on a flat surface and roll once with a rolling pin then add stuff in to it.
  • Finally before folding brush up edges with milk or ghee and fold it into the middle or in your desired shape.
  • make all the sheets with same procedure and place them in a pan without pairing each other.
  • Cook them in a preheated oven at 450F for 15-18 min or till all became brown.
       Serve HOT HOT!!! with tomato Ketchup.

Sabudana Vada (Sago)

Ingredients

  • 1 cup Sabudana (Sago)
  • 3 Medium size Potatoes boiled & mashed
  • 1tbsp Green chilli paste
  • 1/4 tbsp Ginger paste
  • 1tbsp Groundnut powder
  • 1/2 tbsp Lemon juice
  • 1 tsp Cumin seeds
  • 1/4 cup Coriander leaves
  • Few curry leaves
  • Few Mint Leaves
  • Salt to taste
  • Cooking Oil for Deep fry
  • water
 Preparation Process: 
  • Soak Sago(sabudana) with good enough water for 2-3 hrs.
  • Drain excess water as much as possible.
  • Add Sabudana(Sago),mashed potato,coriander,curry leaves,Mint leaves,Cumin seeds,ginger paste,greenchillipaste, groundnut powder,salt & lemon juice.
  • Mix well then Make small size balls & flatten slightly with hands.
  • Heat Oil on Medium heat & fry the vada's till they are golden brown.
  • Serve HOT HOT!!! with ketchup.

Pav Bhaji

Ingredients: 
  • 15  Pav Bread lightly toasted in butter
  • 1 capsicum, chopped
  • 1 large carrot, cubed
  • 2 potatoes, cubed
  • 2 tomatoes, finely chopped
  • 1 cup cauliflower florets
  • 8-10 Beans, string and chop
  • 1/4 cup green peas
  • 2 onions, finely chopped
  • 2 green chillies, slit length wise
  • 1 tbsp ginger&garlic paste
  • 1/4 tbsp turmeric powder
  • 1/2 tbsp red chilli powder
  • 1 1/2 tbsps Pav Bhaji Masala
  • 1 tbsp lemon juice
  • ½ stick low fat un salted butter
  • 1 1/2 tbsps oil
  • 1/2 Cup finely chopped fresh coriander leaves for garnish
  • salt to taste
  • Water

Preparation Process:

  • Boil Potatoes, cauliflower, peas, beans and carrot along with 1 cup of water in pressure cooker, till they became soft.
  • Drain water and keep aside.
  • Mash all the cooked vegetables using a masher.
  • Heat oil and little butter in a Thick bottom Pan, add the green chillies and onions, saute for 3-4 min.
  • Add ginger&garlic paste and saute for another 3 min. Add capsicum and saute for 3 mins
  • Add chilli powder, turmeric powder, pav bhaji masala, salt.
  • mix well then add the tomatoes and cook until they became soft.
  • Then add the mashed vegetables on medium high for a min.
  • Then simmer the flame mix and cook for another 15 mns.
  • Turn off the flame and add butter and lemon juice then mix well.
  • Garnish with fresh coriander leaves.
 Serve HOT HOT!!! with lightly toasted pav and very small chopped onions,small piece of lemon & on top add bit butter.

Cauliflower Manchuriya (Gobhi manchuriya)

Ingredients for cauliflower manchuria: 
  • 1 medium Gobhi (Cauliflower)
  • 3/4 cup All Purpose Flour (Maida)
  • 1 tbsp Corn Flour
  • 1 Chopped green chili
  • 2  tbsp Ginger & Garlic Paste
  • 1 Cup  Chopped Onions(medium sized)
  • ¼ cup chopped Garlic pieces
  • 1/4th tsp Ajinomoto
  • 2 tbsp Soya Sauce
  • 1tbsp Chilli sauce
  • 2-3 tbsp Tomato Ketchup
  • Cooking Oil to fry
  • ½ Cup Chopped Coriander Leaves
  • Water
  • Salt to taste 


Preparation Process :
  • Boil the water and then add the Cauliflower  let it cook for  3 min then drain the water
  • Make a paste of maida, corn flour and salt using water.
  • Dip the gobi florets in the paste and deep fry till golden brown. Keep them aside.
  • Heat oil in another pan and add  ginger & garlic paste fry till it  oozes the raw flavour, add chopped green chilli &chopped onions,Chopped garlic add salt and fry.
  • Mix Chilli sauce, soya sauce and tomato Ketchup and Ajinomoto into it.  
  • Add Deep fried Gobi and mix well.
  • Garnish it  with coriander leaves.
Serve HOT HOT!!! Cauliflower manchuriya with Tomato ketchup

Tamalapaku(Beetel Leaves) Bajji

Ingredients 

  • 5-6 Beetel Leaves
  • 1/2 cup Gram Flour (Besan)
  • 1 tsp Ginger Garlic Paste
  • 1/2 tsp Red Chili Powder(Or Green chilli paste) 
  • 1/2 tsp cumin seeds 
  • Salt to taste
  • Pinch Of Baking Powder (Baking soda)
  • Oil for deep frying

Preparation Process: 

  • Wash beetel leaves and cut them in which shape u like.
  • Add cumin seeds,salt & baking Powder, ginger garlic paste, turmeric mix besan like a smooth thick batter by using water little little..
  • Take oil in a pan for deep fry on medium heat.
  • Dip each beetel leaf in the prepared besan batter and slowly drop into hot oil.
  • Fry the betel leaves on both sides until golden brown.
  • put them on absorbent paper.
  • Serve HOT HOT!!! with finely chopped onions,lemon & Tomato ketchup.

Aloo Bonda

Ingredients:
 
  • 2 Large Boiled, Mashed Aloo (Potatoes)
  • 2 Green Chilies (chopped)
  • 1tbsp lemon juice
  • 1 tbsp cumin seeds
  • 1 tbsp mustard seeds
  • 1/2 Cup Coriander leaves (finely chopped)
  • 1cup gram flour(Besan)
  • Salt to taste
  • Red chili powder to taste
  • 1/4th tsp Garam Masala powder
  • 1/4th tsp turmeric powder
  • 1tbsp lemon juice
  • Cooking Oil enough for deep fry
  
How to make aloo bonda:

 
  • Take a pan add 1 tbsp oil and heat it then add cumin seeds,mustard seeds,turmeric,green chillies.
  • Add mashed aloo (potatoes) ,salt, chili powder, garam masala, coriander, and mix well then put off the flame and add lemon juice.
  • In a bowl take a cup of gram (Besan) flour, add pinch of turmeric powder, little salt to it, Add little water and mix and make a batter like neither too thick nor too lose.
  • Make small round balls of aloo (potato) stuff.
  • Heat the oil for fry 
  • Dip each ball in the batter and deep fry them till they are in golden brown.
  • Serve HOT HOT!!!aloo bonda with Tamarind chutney or mint chutney.
