Ingredients
- 2 cups Poha Thin or Medium
- 1 cup Mixed vegetables diced (peas/carrot/corn/beans/potato)
- ½ cup chopped onions
- Few Peanuts
- 1/2 Tbsp Turmeric Powder
- 1 tbsp Cumin Seeds
- 1 tbsp mustard seeds
- 3-4 green chillies (slit)
- Few Curry leaves
- 1 tbsp Lemon juice
- 3-4 Cooking Oil
- 1/4 cup Chopped coriander leaves
- Salt to taste
- Water
Preparation:
- Soak Poha in enough water,let it soak until it turns soft then drain the water completely.
- Chop the vegetables finely and boil them separately either in the microwave or stove.
- Heat oil in a heavy bottom pan fry Peanuts then add Cumin Seeds,mustard seeds let it splatters.
- Then add curry leaves, green chillies,chopped onion, mix well and sauté until it turns translucent.
- Then add boiled vegetables,salt,turmeric and cook for 2 min.
- If needed add little oil and then add soaked poha and mix evenly and continously without sticking it to the pan.
- Cook till it becomes little hot and cooked evenly then turn off the flame.
- Finally add Lemon Juice and garnish With Coriander.
Serve HOT HOT!!!Vegetable Poha.
